Deborahs Quick and EASY Black Bean Brownie! This could well become your family’s next go-to recipe. It’s so easy even the kids can make it. Just throw everything into the food processor, into a pan and into the oven! I tin of organic black beans, drained and rinsed well ¾ cup fairtrade cocoa powder ¾ cup coconut sugar ½ tsp Himalayan salt 1 tsp vanilla extract ¾ cup organic coconut oil 3 large eggs 1 tsp baking powder ¾ cup of walnut pieces (optional) 1. Preheat oven to 170 C fanbake 2. Prepare an 8in square baking pan by lining the bottom with baking paper. 3. Place all your ingredients apart from the walnuts if using, into the food processor and whiz until smooth. 4. Pour into your baking pan and bake for 20 minutes. 5. Leave to cool in your pan before cutting. Note: If it is a hot day the coconut oil will need to set, so I suggest you cool your brownie down and then place in the refrigerator to set. Store in an airtight container (in the fridge if it’s hot)
