Debs Pork Lumpia Ingredients: 2 lb. ground pork 5 cloves minced garlic 1 med. onion minced Add any veggies you like, bean sprouts, shredded carrot, green beans, cabbage My note: I didn’t add bean sprouts. 2 Eggs Lumpia wrappers My note: I used egg roll wrappers because lumpia wrappers are not available in my area). Directions: 1. Saute garlic and onion. 2. Add pork. 3. When almost done cooking, add additional veggies. 4. Add eggs and mix thoroughly. My note: Some people roll up raw pork but I prefer to cook pork thoroughly. 5. Wrap filling in wrapper. 6. Deep fry. My note: Stand the completed lumpia up or leaning at an angle so that any retained oil has the ability to drain out of one small spot vs. on its side. Dipping sauce Ingredients: 3 Garlic cloves (minced) 1/8 tsp. Salt 1/4 cup Vinegar 1/8 tsp. Pepper Directions: Combine all ingredients; serve with hot lumpia and fried or plain rice. Side dish suggestion: Debs super delicious Fried Rice My note: (I used my leftover brown rice and pork tender loin) Ingredients: 1 cup cooked boneless pork loin, cut into 1/2 -inch cubes ½ cup fried spam, cut into 1/2 -inch cubes 2 tablespoons minced ginger 3/4 teaspoon cornstarch 2 tablespoons plus 2 teaspoons reduced-sodium soy sauce 2 tablespoons plus 1 teaspoon peanut or vegetable oil 1 cup finely diced carrots 1 cup frozen peas & carrots (defrosted) 3 cups cold cooked brown rice 1 cup chopped scallions (optional) 1/4 cup chopped cilantro 1/4 teaspoon salt 1/4 teaspoon black pepper 2 eggs Directions: 1. In a medium bowl, combine pork, ginger, cornstarch and 2 teaspoons soy sauce, stirring until cornstarch is dissolved. Stir in 1 teaspoon oil. 2. Heat a large skillet over high heat. Add 1 tablespoon oil, then pork; stir-fry 1 minute using a metal spatula. Add carrots and peas and stir-fry 1 minute. Add remaining 1 tablespoon oil, rice and scallions and stir-fry, combining well, 1 minute. 3. Add eggs on one side, scramble and then mix with the rice. 4. Add cilantro, salt, pepper and remaining 2 tablespoons soy sauce and stir-fry until rice is thoroughly mixed, 1 to 2 minutes.
