Decided to make a stock today. I used it in a creamy roast pumpkin and rocket risotto. 2 small onions, celery and a nob of garlic diced and browned in olive oil. 1 chicken breast sliced thinly and added to the pan. 3 cups of arborio rice added. 2L of chicken stock stirred slowly through the risotto. I roasted half a pumpkin and mashed it. This was stirred through the risotto at the end with a handful of rocket. Salt and pepper to taste.
