Dees Quick Chia Bean burgers! This is a use whatever is left in the fridge meal. I try to not buy food until my fridge is empty you can always make something and prevent food waste! This recipe started with having some raggedy lettuce, 2 tomatoes, 1 onion and a soft red pepper. Theres bound to be some kidney beans in your pantry! Its a good mid-week meal if you cant face the shops and it makes 4 burgers! Fry 1 onion with 1 clove crushed garlic. Add 2 tsp seasoning (Cajun/chipotle/chilli powder) whatever you have. Add diced red peppers, 1 tin of drained kidney beans and 1 tbsp of water. Cover and cook at a low temp for 15mins. Add 2 tablespoons milled chia seeds (optional). Stir and mash together. Form into 4 even shaped balls and coat with flour/polenta. Put in fridge to firm up and pan cook before serving with salsa and steamed potatoes and mint.
