Definitely seems like spring is in the air so here are some good ideas for picnic food, would also be good for a lunch at home outside on the lawn!! Picnic Meat Loaf 200g pork sausages, removed from their casings 4 chicken breasts, finely chopped 1 onion diced, 1 Granny Smith apple, grated 1/4 cup parsley, chopped, 1 red pepper diced 1 tsp salt, 2 tsp ground pepper 1 cup fresh breadcrumbs 2 sheets puff pastry 6 hard-boiled eggs, 1 egg beaten Preheat oven to 200deg. Mix together the sausage meat, chicken, onion, apple, parsley, red pepper, salt, pepper and breadcrumbs. Lay the puff pastry sheets out on a floured surface and press half the mixture into the centre to form a flat sausage. Press the eggs into the mixture end to end and mould the rest of the meat mixture over and around them. Cut the pastry on the sides of the sausage into 2 cm strips and fold them over the top, weaving as you go. Brush with beaten egg and bake for an hour or until golden and the juices run clear when the "meatloaf" is pricked with a sharp knife.
