Ginger Date Muffins Prep Time: 10 minutes Total Time: 30 minutes Serves: 12 Ginger Date MuffinsIngredients 1 cup flour, all purpose 1 cup flour, whole wheat ½ cup brown sugar, packed 1 tablespoon baking powder, double-acting 1 teaspoon baking soda ½ teaspoon ginger, ground ½ teaspoon cinnamon, ground ½ teaspoon salt 1 cup low fat buttermilk 1 slightly beaten egg, large 3 tablespoons canola oil 1 teaspoon vanilla extract 1 cup dates, pitted, chopped Preparation: Preheat oven to 400°F. Prepare muffin pan by either spraying with cooking spray or using paper muffin cups. In a large bowl, sift together flour, sugar, baking powder, baking soda, ginger, cinnamon and salt. In another bowl, combine buttermilk, egg, oil and vanilla. Gently stir buttermilk mixture into flour mixture; do not overmix. Fold in dates. Pour into muffin tin and bake for about 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
