Diabetic Fudge 13 oz can evaporated skimmed milk 3 Tbsp cocoa 1/4 cup butter 1 Tbsp granulated sugar replacement Dash of salt 1 tsp vanilla extract 2 1/2 cup unsweetened cereal crumbs ( used rice krispies but any unsweetened cereal would work) 1/4 cup finely chopped nuts Combine milk and cocoa in saucepan; cook and mix well over low heat until cocoa is dissolved. Add butter, granulated sugar replacement, salt and vanilla. Bring to a boil, reduce heat and cook for 2 minutes. Remove from heat; add cereal crumbs and work in with a wooden spoon. Cool for 15 minutes. Divide in 1/2; roll each 1/2 into a rope, 8 inches long. Roll each rope in the nuts and wrap in wax paper. Chill overnight. Cut into 1/4 inch slices. Makes: 64 slices Exchange: 2 slices: 1/2 bread, 1/2 fat, 60 calories
