Did you know it costs $1800 a year to be a certified Green Restaurant? We contacted the Green Restaurant Assoc. in 2009 and discovered that we more than qualified. We decided to just keep on doing what we were doing and keep our money! Every year we take steps towards greener practices. Recently we switched to reusable non bleached parchment paper for baking and we are now using compost able cold drink cups for take out. Weve never served beverages in plastic bottles and all our drinking water is filtered. That includes our ice cubes and water for tea and coffee. New Paltz water smells and tastes of chlorine.
