Dinner at their new St Regis Hotel location. Appetizer was a trio of small dishes, comprising spinach & mushroom in bonito broth, momo tomato & maguro with silky beancurd skin, and... cod fish sperm! Exotic-sounding, but very yummy! Then came golden eye snapper and hamachi (yellow tail), the former was lightly grilled aburi-style which gave it that extra oomph. Third course was tuna cheek, lightly seared on one side, giving it a pinkish meat-like appearance. Slid down the gullet like a dream, mmm! Fourth course, uni on baby shrimp. Need I say more? Sweeeeet heaven on a plate! Fifth course was grilled swordfish, sooo tender and creamy- perfection! The nigiri sushi course comprised of ika, chutoro, ootoro, horse mackerel, prawn, uni, razor fish, anago, and maguro maki. Im not usually a fan of raw mackerel as I find it way fishy, but the shisho leaf topping was a good complement. The fish liver topping the razor fish unfortunately reminded me too much of Scotts Emulsion... Fishy, fishy, fishy! And the juicy fruits were the perfect foil for a beautiful, absolutely happifying meal!
