Dinner experiments in the kitchen tonight: Parsley, lemon and garlic chicken with Parmesan sprinkle! This was easy and flavourful. The savoury blend of parsley, garlic and lemon did wonders. Also the mustard and Parmesan addition gave this subtle roast chicken a savoury kick! Ingredients: Lemon juice (of 2 lemons) Dijon Mustard (2 teaspoon) Lemon zest (1 teaspoon) Garlic cloves (4 cloves) Olive oil ( 1/2 cup) Parsley (1/2 cup) Tarragon (dried) Parmesan cheese (1 tablespoon) Kosher salt (to taste) White pepper (to taste) Method: Preheat oven at 200 degree C. Prepare the marinade using the above mentioned ingredients. Mix all of them well in a bowl. Marinate the chicken thoroughly with cuts and refrigerate for an hour. Place the marinated chicken pieces in the roasting tray. Roast for 40 minutes. (20 mins each side)
