Dinner tonight - tilapia, baked in foil with a balsamic vinaigrette drizzle. roasted cauliflower and spinach/arugala salad. For the salad, I opened a can of garbanzo beans, and put them in a container with some finely chopped mizithra cheese that we bought out of the try this weird stuff section. I added some garlic, olive oil, pepper and balsamic and shook it up real good to combine. Figured it would make a nice addition to the salad, and none of those are things that we dont like. Kid doesnt get off work until 8:30, so I figure a nice warm dinner when she gets home will hit the spot. :-)
