Dinner tonight is Pork Collar with Leeks. This was inspired by the salted fish pork belly dish which is very popular in Malaysia. Instead of pork belly I used pork collar shabu shabu. The sauce is my Umami triad which I stumble upon during my Har cheong Gai experiments. 2 tsp shrimp paste, 2 tsp oyster sauce and 2 tsp sesame paste. Use this to marinade 250g pork. Sauté 5 stalls of sliced leeks till soft, lay aside. Heat oil till smoking and fry 5 dry chillies till it has that smokey fragrance. Add pork and stir fry till just cooked. Add 1/2 cup water and simmer. Add leeks, dark soy sauce for color and corn flour slurry to thicken. Umami bomb! The umami triad works for chicken too!
