Dinner tonight was a spin on chicken parm done light! Started with grilled chicken breasts (were huge fans of precooked frozen breast from our local chicken store). Next, I mixed 1/2 cup of Panko break crumbs with some of our Velata coriander herb rub and after topping the chicken with shredded mozzarella, I sprinkled on the Panko mix. Lastly, I stuck it under the broiler to melt the cheese and brown the Panko and served it over pasta with marinara. Same flavor with a lot less fat and calories! Whats for dessert? 😉
