Dinner tonight was a super easy crock pot recipe that ALL the kids ate, including Andersen. And John went back for seconds! Its circulated around the web but Ive been making it for several years. 2-3 chicken breasts 2 cans Cream of Chicken soup 1/4 onion roughly chopped in large chunks (my kids like to pull them out but it gives good flavor) Around 2 TBS butter (or whatever comes off when you swipe through it with the spoon) Place chicken breasts in crock pot, add soup, throw in onion. Add enough water to cover chicken breasts. Add butter. Salt & pepper as desired. Cook on high for 3-4 hours. Somewhere around 3 hours I shred the chicken right in the crock pot. The original recipe calls for canned biscuits, rolled in balls and dipped in flour and then put on top for dumplings for about 15-30 minutes. I used to make the Bisquick biscuits because I liked the taste better and theyre easy. Now that Im going without gluten we make up some brown rice and put the chicken & sauce over the rice. This is what the kids like the most. Andersen ate an entire bowl of chicken & rice tonight! Play with it. Tonight I threw in some sliced mushrooms about 15 minutes before we ate. It really is super easy, very good and leftovers turn out great. Enjoy!
