Dinners in the oven. Decided to make eggplant parmigiana but my version of course. Recipe: Cut eggplants into 1/4 rounds Sautée with a bit of olive oil ( I dont bread and fry) Turn and remove when slightly translucent Add a pinch of salt and pepper when done Prepare the sauce with sautéed onion and garlic Toast some #Panko Breadcrumbs To prepare pan: Coat with a little olive oil and line bottom with a ladle of sauce and some Panko Add the eggplant in a circular motion Top with grated Parmigiana A few spoonfuls of drained ricotta A ladle or two of sauce Sprinkle shredded mozzerella Add some basil Repeat for two or three layers Add the breadcrumbs for a nice crunch Top with sauce then more breadcrumbs and grated cheese Cook at 350 for 45 minutes Broil for 5 minutes for added crunch. Enjoy!
