Discovered a new dish today by reading the tortilla chips bag recipes. Its called Chilaquiles and made with tortilla chips salsa water shredded roast chicken and shredded cheese choped tomato and chopped onion. I MODIFIED the recipe and added a can of tuna fish instead of the shredded chicken and left out the onions. The end result is a casserole which tastes sort of like enchiladas but softer and easy to chew as the corn chips soften up in the cooking.
