Do you feel like a treat for breakfast on the weekend? We have that covered! Here is one of Paleo Cafes delicious breakfast recipes that we love! Chive Blini with Smoked Salmon Makes 6 6 free range eggs 2 ½ cup almond meal ½ cup almond milk 2 tbls Chives finely sliced ½ tsp baking powder Place eggs, almond meal, almond milk, baking powder and sliced chives into bowl. Mix for 3 minutes with a stick blender or in a blender Refrigerate for 12 hours before use. Add more almond milk if mixture is too thick prior to cooking. Grease a non-stick pan and place it on a medium heat. Pour a 10cm Blini and cook on each side for 2 minutes. For the topping: 30g spinach 50g smoked salmon 5g red onion thinly sliced 6 caper berries 1 tbls lemon aioli Top the cooked blini with spinach, smoked salmon, sliced red onion. Scatter a few caper berries around the plate and drizzle with lemon aioli. Enjoy this dish, It is a great weekend idea :)
