Do you have one standard dish you make when you are feeling “down in the dumps,” that will ALWAYS make you feel better, no matter what ails you? I’ve had the same one for many years and it always works. In olive oil (tonight I used duck fat) I slowly sauté a handful of chopped garlic, to which I add two tins of anchovies that I’ve rinsed and mashed. To that I add some capers, crushed hot red pepper flakes and lots of fresh-ground black pepper. I pour that over cooked-and-drained pasta and cover it with a flurry of grated Parmigiano-Reggiano. I know, I know – several of you don’t like anchovies. This is an old upstate NY recipe.
