Does anyone else remember when chickens you would buy at the grocery weighed 3 lbs or less and that was USUAL? Now they are all closer to 5 or 5.5 lbs. hormones? anyway, my 5.25 lb chicken has been brined for an hour, patted dry, and is now in the fridge for an hour so when I roast it it will have crispy skin. Learned that trick in the The New Best Recipes Cookbook from Cooks Illustrated. Brine ONLY if your chicken hasnt had a sodium solution injected. My veggies are peeled and cut up. Ill start dinner around 4:30 to eat at 6ish. .
