Does anyone have information relating to there being any benefit of using ancient grains to make bread opposed to stock standard wheat? My brother (a baker) has told me Wheats and grains arnt easy for our bodies to digest period. however using old processes that create natural yeast such as sourdoughs (most common) create enzymes that brake up the proteins that bread holds in a way that our bodies can not only digest easier but absorb further nutrients out of said grains and wheats and I can not find much relating to this
