Donegal’s Sargasso Restaurant Bord Bia/RAI overall Just Ask! Winner Sargasso Restaurant, Letterkenny was recently announced as the Bord Bia/RAI overall Just Ask! winner. Sargasso received this prestigious accolade at the Irish Restaurants Awards 2013 ceremony which took place in the Burlington Hotel, Dublin. The Just Ask! campaign encourages diners to look for information on where the food on their plates comes from when eating out and the monthly award is given to restaurants that demonstrate best practice in providing customers with this information. Located in the heart of Letterkenny, Sargasso was announced in April as the Restaurants Association of Ireland Just Ask! Ulster Regional winner. Recent research from Bord Bia* has revealed that supporting local businesses is a key consideration for members of the public when eating out, with over two thirds (69%) of the population rating ‘the use of Irish/local produce’ as important when going out for a meal. A well-deserving winner, Sargasso not only lists the areas from which their produce comes from, but also provides full details of the farmers’ names and localities, ensuring that customers are aware of the origin of each menu item. Dry aged beef and lamb is supplied by McCarron’s of Raphoe and seafood is landed in Killybegs and supplied to the restaurant by Albatross Seafoods. Chicken is sourced from Noone’s Farm Fresh Poultry in Clonmany, turkey from Pearson’s, St Johnston and organic Tamworth pork from Hamilton’s Farm, St Johnston. All dairy products and soft cheeses are sourced from Natural Dairies/Yeats Country in Convoy. Fruit and vegetables are supplied by Sean Doherty in Letterkenny and Donegal Fruit Company and potatoes come in from Craig’s Potatoes in Raphoe. A selection of new season farm vegetables, salads, herbs and fruit are supplied fresh by Mardell’s Country Farm, Glenswilly who also supply farm fresh eggs and speciality meats including rabbit and goat. Supporting the local economy and ensuring fresh, local produce for their customers is very important to all at Sargasso, Head Chef Martin Hernandez explains, “Our ingredients and the nature of all our dishes is a great source of pride not only for me but for all at Sargasso.
