Dont have time to roast a whole chook? Here is my short cut to eating a yummy roast! 1. Pre heat your oven to 200 deg. Face the chook on a steady chopping board breast side down. 2. Using a sharp knife cut down one side of the spine making sure you dont cut the whole way through. 3. Open the chicken up and flip over and push the chicken flat. (If you are a bit squeamish you might not like this bit) You will need to sqish the chicken till you hear some bones pop. Put 3 knife cuts in each thigh and one in the thickest part of the breast. 4. Place in your roasting dish and coat liberally with coconut oil and rub in your spice rub and push it in where you made your slices. 5. Place in the oven thigh side first and cook untill thigh juices run clear. I will place a rub recipe on the website this week and dont forget you can even cooka chicken like this on the BBQ!
