Dorothy Coxs Hot Rolls Recipe...this makes 6 doz., so youll have to cut it down. 4 pkgs. yeast 1 cup lukewarm water 21/4 cups milk 1 pint boiling water 8 eggs 1 cup sugar 4 teas salt 1 cup melted shortening 4 1/2 quarts flour Dissolve yeast in lukewarm water. Mix 2 cups milk with boiling water, and cool to lukewarm. Beat eggs well. Add sugar, salt, and melted shortening. Stir in cooled milk and boiling water mixture. Stir in dissolved yeast. Mix well. Add flour gradually; mixing well after each addition. Turn out on lightly floured board and knead well. Put in greased bowl. Cover with damp cloth. Let rise until doubled in bulk. Knead again to original size. Return to bowl, cover and keep in refrigerator until needed. When rolls are to be made, pinch off dough size of a walnut. Put in greased baking pans. Let rise until doubled in bulk. Brush tops with remaining 1/4 cup milk. Bake in hot oven (400) for 20-30 mins. or until rolls shrink from sides of pans. Makes 6 doz.
