Nuqul-e Badami Ingredients: Roasted Almond Sugar Water Hel INSTRUCTION: Sugar to water ratio = 2:1 Add hel and let it boil. The hardest part of this is getting the sugary water the right consistency. ( When you put a drop of it on a plate, you want it not to be runny ). Let it cool for a few seconds and carefully touch the drop (ITS HOT, so you be careful!). It should be a sticky consistency, not runny water. Once you get that, turn off the heat, or put the heat very very low. The best way to get the already roasted almonds covered is use a little plastic Tupperware container that you dont mind getting really dirty. Put a handful of roasted almonds in the container, drizzle a spoonful of the hot/warm syrup in and mix quickly with a spoon. Repeat many times until you get the nuqul coated with as much sugar as you want. You should notice the sugar getting white as it cools and as you build the layers. As you mix, its gonna be messy. All the almonds will be sticking, your spoon and container will be a mess. Dont worry. Just keep going with adding syrup and mixing and separating the almonds with your spoon. Once the nuqul is coated to your liking, wait a few seconds for them to cool (they cool pretty quickly) and transfer them to a separate clean container (if any are stuck together, separate them). And repeat with a fresh batch of almonds. The end result doesnt look quite as beautiful as the store-bought nuqul, but the taste is awesome and its better because you made it. lol
