Dried vegetable The pulses are seeds , derived exclusively from plants of the family Fabaceae , also called legumes harvested at maturity for human consumption. These are foods rich in carbohydrates , about 60%, mainly of starch , and protein , about 20%. However, because of their deficiency in certain amino acids , it is advantageous to associate them with grain , especially in diets vegetarian . They are also interesting for their contributions in fiber and minerals, including iron and calcium . These are economical food, easy to maintain while maintaining their nutritional qualities and ancient usage. The main problem is the fight against pests of these seeds ( weevils , weevils ) ...
