Duck Fat Potatoes. Simple, quick and easy. Peel and cut potatoes into big chunks, split a couple heads of garlic in half, a few sprigs of rosemary, toss in olive oil, yes double fat because one is not enough. I use olive oil first as it helps the salt and pepper to cling on to the potatoes. Then smoother with duck fat. If in doubt as to amount, add more than you think you need, to be safe. Same with the salt. You need lots of it as well. Roast in a high oven, 200 to 220. Turning a couple of times. Resist opening the oven too often, biggest mistake home cooks make!
