Duck and Potato Curry Ingredients 2tbsp. Troppo curry powder1/4 tsp. salt1 tbsp. fish sauce1 small duck, cut into bite-sized pieces4 small waxy potatoes, peeled & cut in half1 large onion, quartered400g can of chickpeas, rinsed and drained4 garlic cloves, crushed½ Cup peanut oil5/8 cup waterMethod 1. Mix the curry powder, salt and fish sauce and toss it with the duck. Put in fridge and let it marinade for 30 minutes2. Put the onion and garlic into a food processor. Pulse until you have a smooth paste.3. Heat the oil and fry the potatoes until they are light brown on all sides. Remove from pan. Put the duck pieces into the same oil and lightly brown that too. With a slotted spoon remove the duck from the pan. 4. Put the onion pate into the oil and cook over medium heat, stirring frequently, until it turns a rich reddish brown color, this should take 15-20 minutes5. Return the duck and the potatoes to the pan, add the water. Cover the pot and simmer for 45 to 60 minutes, stirring occasionally. The meat should be tender
