EASY Meal Prep!! Tuna and spinach stuffed portobello mushroom. 1 portobello mushroom cap 1 can of tuna 1 handful spinach (chopped) 1/2 roasted red pepper (chopped) 1 low-fat mozzarella string cheese Cayenne, garlic powder and oregano to taste. Wash and clean gills from mushroom cap. Place mushroom on baking sheet, and in oven at 375° for 10 minutes. Mix the tuna, spinach, red pepper, and seasoning in a bowl. Cook the tuna mixture on the stovetop for 5 to 8 minutes until the spinach has wilted, and the ingredients is heated thoroughly. Place the tuna mixture in the mushroom cap and top with pieces of string cheese. Place back in oven until the cheese has melted. Top with no sugar added marinara sauce and serve.
