EGGS BENEDICT: English Muffin Sliced Ham Poached Eggs Sauce Hollandaise ENGLISH MUFFIN: 680 Flour 360 Water 10 Salt 30 Yeast 55 Sugar 50 Egg 85 Butter SAUCE HOLLANDAISE: 250 Butter Clarified 3 Egg Yolks Pinch Cayenne 1 Bay Leaf 3 Pepper Corn 20ml Vinegar 5ml Dijon Mustard 1/4 Lemon Juice only METHOD: Reduce the vinegar, peppercorns & bay leaf to 5ml. Strain and pour into bowl with mustard, cayenne & yolks. Stir to combine. Whisk to ribbon stage over bain-marie. Remove to fold hand towel. Stream warm clarified butter in while whisking vigorously, until combined and thickened. Add lemon juice.
