Each week we will be picking 1 beauty food so that you can create your own detox beauty food portfolio. Creating new and exciting ways to stay beautiful has never been easier. This week the focus is on Cucumbers. Cucumbers are high in B vitamins and nutrients as well as potassium, calcium, iron and magnesium. These essential vitamins and nutrients help build skin radiance and maintain a glowing complexion, leaving your skin looking resilient and radiant. Naturally filtered, enzyme-rich water in cucumbers provide an excellent natural skin hydrator, which is required for supple skin. Cucumbers also contain vitamin C and caffeic acid, which has inflammatory properties so cucumbers can be used over the eyes to reduce under-eye puffiness and can also directly reduce the appearance of cellulite by rubbing onto the effected area. As well as helping to assist the skin, cucumbers flush out the kidneys and prevent the feeling of bloating all around your body, making it a feel good food. Why not try the following ideas in your meal planning - Cucumber and Coconut Salad Chop ½ small red onion thinly and place into a bowl of ice water. Leave the onion to stand for 10 minutes, then drain. Thinly slice a cucumber lengthways and place into a large bowl. Add the onion along with 1 cup of unsweetened large-flaked coconut and gently toss to combine. Add 2 tablespoons of coconut water, 1 tablespoon of fresh lime juice, 2 teaspoons sugar and 1 ½ teaspoons ground sea salt to the bowl and gently toss to combine together. Put in the fridge until chilled, at least 30 minutes and up to 4 hours. Season further with salt and sugar if desired then serve and enjoy! Tiger Salad with Cucumber Whisk 1 tablespoon unseasoned rice vinegar, 2 teaspoons toasted sesame oil, 1 teaspoon toasted sesame seeds and ¼ teaspoon crushed red pepper flakes into a large bowl. Cut 1 bunch cilantro leaves into 2 inch pieces and add the bowl along with 4 thinly sliced celery stalks. Thinly slice 2 small cucumbers/ ½ large cucumber and thinly slice 6 scallions and combine in the bowl. Season with sea salt and black pepper and stir together. Serve and enjoy! itsalldowntoyou
