Easiest potato soup ever: Chop up an onion and saute it in butter. (Optional) If you have some celery, chop it up and throw it in there, too. Leeks, green onions, carrots... whatever you have laying around can go in there, too. Peel and chop 3-4 large potatoes. Throw them in with the sauteed veggies. Cover the whole mess (just barely) with vegetable broth (chicken broth would probably be good, too.) Cover and let it simmer, stirring occasionally, for 30-35 minutes. Add more broth if necessary. When everything is nice and soft, mash the whole thing gently with a potato masher. Add some milk and stir so its a nice consistency. Simmer for another few minutes. Put in bowls. Top with shredded cheese or chives or bacon or sour cream, or whatever you want. Enjoy. The kids will gobble this up. They can add a little more cold milk to cool it off. :)
