Easter dinner: Fresh ham roast with rosemary, garlic and lemon; roasted potatoes with herb vinaigrette; Brussels sprouts and carrots with almonds. I just cured a small ham (very thick ham steak, really) and smoked it for, what was it, 10 hours? Really good, really smokey, good for seasoning and sandwiches - too rich for a main course. It made me want a fresh ham roast - no cure, no smoke. I start on it right now, takes 18+ hours.
