Easy Blueberry Muffin Recipe flat rocks Its summer camp at school and with the help of my wonderful wife we came up with this idea for our students creating muffins that look similar to flat rocks as one of our lessons are based on rock formations. To create rock shapes do not place batter in baking tray, simple fill muffin cups and bake. Making our blueberry muffins is simple. All you need to do is combine flour, sugar, baking powder and a little salt in a large bowl. Then add vegetable oil, an egg, milk and vanilla extract. Stir with a fork then add the blueberries. Divide the batter between 8 muffin cups and bake! Simple, right. These are so quick, you could whip them up for the family in the morning for breakfast. You can even make these with fresh or frozen blueberries – if you use frozen, do not thaw the blueberries. Something to keep in mind: When you make muffins, remember this: mix dry ingredients as much as you want, mix wet ingredients as much as you want but, when you put the two together only mix until they combine. If you over mix, the muffins will be heavy and flat. This is why we ask you to use a fork to mix things together in our recipe below. If you were to use a hand blender or stand mixer, the muffins could become tough. INGREDIENTS 1 1/2 cups all-purpose flour 3/4 cup white sugar 1/2 teaspoon salt 2 teaspoons baking powder 1/3 cup vegetable oil 1 egg 1/3 cup milk 1 cup fresh or frozen blueberries 1/2 cup white sugar 1/3 cup all-purpose flour 1/4 cup butter, cubed 1 1/2 teaspoons ground cinnamon DIRECTIONS Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking. Bake for 20 to 25 minutes in the preheated oven, or until done. All done! Now take a photo, rate it, and share your accomplishments
