Easy Holiday Turkey Pot Pie: 1 Frozen JennieO Oven Roasted Turkey Breast 2 c. Thick Creamy White Sauce (any basic recipe) 1 box Pillsbury Pie Crusts 1 c. Frozen Green Peas 1 large sliced Carrot 1 c. Chopped Roasted Red Pepper 1 c. Frozen Sliced Green Beans 1 c. Pepperidge Farm Herb Seasoned Stuffing** 1/2 c. Chopped Sweet Onion 1 t. dried Thyme; (Sage, Garlic Powder and Ground Pepper to taste.) 1 T Butter or Margarine 1 Egg White [No salt added due to high sodium content of turkey breast and gravy packet provided.] — Roast turkey according to instructions and let cool. Cut 2-3 c. turkey into 1/2 inch cubes. — Prepare thick white sauce and cool slightly. (Be sure to bubble flour mixture 1 full min). — Roll out pie crusts according to pkg. directions and line glass pie plate with one crust. — Stir veggies, stuffing cubes and seasonings into white sauce and place in pie pan; dollop with butter. — Place second crust on top and seal to bottom crust following pkg. instructions. — Brush crust with egg white (opt.). Prick crust 3 or 4 times to vent pie. — Bake at 425 degrees for 45 minutes until crust is golden brown and veggies are tender. — Cool pie slightly before slicing and serve with spray butter or warmed gravy. Suggested Sides: Roasted Butternut Squash and Cranberry/Orange/Apple Relish.
