Easy Kolachy ***These traditional fruit filled Polish cookies made easy and inexpensive, yet they are delicious and a real show stopper! Servings: 4 dozen Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 90 minutes Ingredients: Cookie Dough: 2 cups Bisquick Baking Mix 1/2 tsp Cardamom 1/4 cup Sugar 1 cup Sour Cream Suggested Fillings: 1 can Blueberry Pie Filling 1 can Cherry Pie Filling 1 can Lemon Pie Filling 1 can Raspberry Pie Filling 1 can Solo Poppyseed Filling 1 can Solo Almond Filling 1 can Solo Prune Filling Topping: Powdered Sugar or Crystals of Sugar Directions: Preheat oven to 350 degrees. Mix together dry ingredients. Mix in sour cream. A firm dough will form (dont over work the dough). Divide dough in two. Roll out to 1/4 inch thick (or less)on a lightly floured surface. Using a pizza cutter: Cut dough into 2 x 2 inch squares (can make bigger or smaller) or you can use cookie cutters to cut into circles or squares. Place the squares of dough onto ungreased baking sheets. Gently press a little dent into the center of each cookie with your finger. Choose one or more fillings (I usually use two flavors depending on how many batches I make. Put about 1 teaspoon of filling in center dent. For the square cookies: fold over two opposite corners of the dough and pinch them together or fold one over the other as in photo. For round cookies you dont need to fold over. Bake the cookies 7-10 minutes or until lightly golden brown. Remove from oven to wax paper lined surface. Sift over cookies with powdered sugar. Let cool. Just before serving dust with a little more powdered sugar to freshen them up. Serve. Helpful Tips: These cookies should go in an airtight container. And refrigerated or frozen. If not refrigerated, they should be eaten in a day or two. I freeze cookies on baking sheet and then stack them into containers for freezing. You can use jam too. The reason for 90 minutes is because I bake one or two pans of cookies at a time
