Easy Lentils From The Fridge This recipe was developed one night when my friend Michael arrived with a bowl of cooked red lentils and he was wondering what to add to make them tasty , so after a quick look around my pantry and fridge we ended up with this yum.my dish , Michael has cooked this for several friends so i thought i would share ~~~~ INGREDIENTS ~~~~ 2 cups of lentils ( red or i have used puy ) 2 1/2 cups of water cook ing time refer to packet ( puy was 22mins ) 1 x tablespoon olive oil 1 x teaspoon sumac 3-4 shallots finely sliced 3-4 garlic cloves chopped 4-6 florets of cauliflower finely chopped 1 x bottle passata ~~~~ METHOD ~~~~ Saute garlic , shallots and sumac in olive oil on a low heat to enhance the flavour.Approximately 3 - 4minutes Add cauliflower sauté for 2-3 minutes Add bottle of Passata sauce , stir then add the lentils keep stirring till combined and heated . If it as a bit dry add a small amount of water approximately 1 tablespoon at a time . ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ NOTE : Lentils can be cooked in vegetable stock . I make my own veg stock from left over vegetables scraps from the peelings of carrots, zucchinis ,parsnips , shallots etc.. i keep in a plastic bag in the freezer until i have a good bag full. Use a big saucepan , place vegetables in pot with enough water to just cover the vegetables add 1 1/2 tablespoons of black peppercorns Bring water and vegetables to the boil then simmer until vegetable are cooked down and the water has reduced by a 1/3rd . Put through a fine hole colander , allow to cool . Freeze stock that is not used . I find home made stock to be lass salty and a delicate flavour . Any questions please ask . Enjoy xx
