Easy black bean nachos (feeds 4): 2 cans Libby organic black beans Whole foods white corn tortilla chips Green leaf lettuce 3 tomatoes Cheese Light sour cream Olives Combine beans in pot and heat over medium. While heating, slice lettuce and dice tomatoes., put a serving of chips in a shallow bowl. Drain beans after heating. Layer lettuce over chips, then beans and cheese to melt cheese. Top with tomatoes, olives and sour cream. You can add or subtract any items to make it your own. My way was 306 calories and totally filling!
