Eat food. Not too much. Mostly plants. That was the mantra that offer Michael Pollan gave people to pursue healthy living in The Omnivores Dilemma, his mammoth book on hunting, gathering and eating. In this podcast, he shares some criticism of the paleo diet, some variants of which, among other choices, eschew bread and focuses on more raw foods. The process of cooking and baking converts meat and flour into more digestible forms, says Pollan, pointing to research which is suggestive of raw food diets preventing some nutrient transfer. The most interesting recommendation he made, however, may be the one on pickles and microbiotics. Specifically, Pollan suggests ingesting some microbes found in fermented foods like beer, yogurt, kimchi, miso, sauerkraut, pickles. Its interesting to consider how widespread pickling is across cultures. I look forward to listening to the rest of this podcast later today.
