Elizabeth and Paul have worked Singing Frogs Farm for 8 years. The farm is northwest of Sebastopol and is a year-round farm. Elizabeth says her favorite thing they grow is the greens, all of them; Napa cabbage, bok choy, chard, tat soi and a bounty of different lettuces. They also sell sweet, crunchy carrots, fennel bulbs, romanesco, broccoli and squash. Elizabeth pointed out that they hand cultivate and do not rototill. This means that they reduce greenhouse gas emissions and maintain nutrients in the soil, which means, ultimately, more nutrients in the vegetables you eat. Paul was very involved with the group who developed the Food Forum, and was part of an advisory group to the Sonoma County Board of Supervisors. You can find the Singing Frogs Farm booth at the Sebastopol market and the West End Market on Sundays; the Occidental Market (Fridays, June through October) and the Wells Fargo Saturday market. They also do CSAs. Elizabeth said she thinks right now they are about 50-50 market to CSA boxes. I love their carrots but my favorite vegetable is the tat soi. In the early part of the season it has a mild, subtle flavor. The more mature green definitely has a tangy mustard aftertaste. It is great in a stir-fry or sautee (also delicious steamed). This green is almost the texture of spinach but stands up better to cooking, and its flavor compliments strong fish like salmon and even heartier meats like Franco’s Toscano sausage. It is a nice change of pace in a green salad.
