She does not have a Page or Blog.She is a great Friend here in Jodies Kitchen. and is kind enough to send in recipes from time to time :) Thanks Phyllis♥ ENCHILADA CASSEROLE 1 TO 2 LBS OF COOKED MEAT, CAN USE HAMBURGER, GROUND CHICKEN OR TURKEY 1 CAN OF CREAM OF MUSHROOM SOUP + 1 CAN MILK or YOU CAN USE CREAM OF CHICKEN 1/2 TO 1 WHOLE ONION TO YOUR TASTE 1 CAN OF GREEN CHILIES OR FRESH TO YOUR TASTE 1 PK CORN TORTILLAS 2 CUPS CHEESE, MONTEREY JACK, LONGHORN, CHEDDAR WHAT YOU LIKE AFTER MEAT IS COOKED ADD THE ONION AND GREEN CHILES AND MIX TOGETHER COVER THE BOTTOM OF A CASSEROLE DISH WITH CORN TORTILLAS PUT 1/2 OF THE MEAT MIXTURE OVER THE TORTILLAS PUT CORN TORTILLAS OVER THE MIXTURE, SPRINKLE SOME CHEESE PUT BALANCE OF MEAT MIXTURE PUT TORTILLAS OVER THIS NOW POUR THE CREAM OF MUSHROOM SOUP THAT HAS BEEN MIXED WITH THE MILK. SPRINKLE THE CHEESE OVER THAT BAKE AT 350 FOR 30 - 35 MINUTES. LOOKS LIKE YUCK BUT TASTE YUMMY YUM AT THE HOLIDAYS I WILL USE THE LEFT OVER TURKEY, OR SOMETIMES I WILL BUY THE ROTISSERIE CHICKEN AND USE IT. ENJOY
