Even though our little Rowan spent the weekend here, I created a new recipe for pumpkin bread. Yes, it has gluten. Yes, its got some sugar. But, oh my was it good. I tweaked a standard roll recipe and added canned pumpkin, pumpkin pie spice, and extra cinnamon and cloves. It was lightly sweet, and very hearty. Then I went a step further and made pumpkin rolls by spreading melted butter on rolled out dough, then sprinkling with a LOT of pumpkin pie spice and a little organic sugar. Cut em up and baked em very thin. EEEEEYUM! Im not sure a recipe like this exists, so I will re-create it and actually write down quantities of ingredients. :-) It had coconut milk, coconut oil, whole wheat flour, coconut flour, coconut sugar.... mmmm MMMM. I wanted to make a coffee glaze so they could be pumpkin spice latte rolls.
