Evening my good friends, its a little past 6 oclock and had a busy day, but wanted to talk about my mother Stella, she loved to shop. loved to cook and assist Pa anyway she could, whether it was cutting the lawn, shoveling snow, or helping Pa bury 4 fig trees in the late fall for the winter , then digging them up in the spring.. we had figs stuffed with walnuts and so delicious..Ma loved to help Pa set up the basement kitchen to make fresh Italian sausages, cured and dried salamis, suprasetta and even the Italian ham..i loved to help by tasting the seasoned meat, which was 80 lbs. of raw pork loins hand cut, seasoned with salt, red pepper flakes, black pepper and other spices, then Ma would fry some in a pan, it was my job to approve it or say add this or add that.. use the hand cranked unit to push the meat into the pigs intestines,, and set the meat to be cured in a smoker Pa built outside in a shed and freeze the delicious fresh sausages to be roasted, or cooked in sauce for pasta, or sauted with peppers and onions for sandwiches... , besides making wine, and sausages. salami etc.. we made Jared and pressed olives, brandied cherries, those day left me when Pa and Ma went to heaven.. Sunday nights Ma made deep dish pizza, but I mean deep dish, using cake pans two inches deep and the pizza crust stuffed with all the dried meats,peppers, mucshrooms, onions, anchivies, sauce, fresh mozzarella, grated cheese and in the oven it went.. we couldnt wait to get that first bite into our mouths..... never had a pizza like that ever again...we bought out meats at DAVEYS MEAT MARKET,, for our meat provisions,, the veal was pounded news paper thin for the best breaded veal I ever had, the pork, veal and beef fresh ground for Mas famous meatballs, that I ate 4 or 5 right after I got home from the 8 oclock mass... tonight,it was all about Mas love of being a wife, mother, cook, cleaner, bottle washer... I didnt tell you about the canning of tomatos, peppers, mushrooms, Italian green beans.. she lived to be 94 years old, lived 20 years after Pa passed at 82.. I spent every Friday after work with Ma at her house,brother Benny did Thursdays after work we did it so 20 years,, and when Ma would see me around 4:30, shed be waiting at the end of her driveway to hug me ... she would say, when I see you, my heart is so happy... I have to stop now, you cant imagine how much I miss Ma and Pa too, but Ma was Ma.. I will see you tomorrow night, forgive me if I bored you tonight..God Bless you... a favor... dont let a day go by that you dont tell your parents that you love them.. even though we think that they will live forever, they dont......
