Ever heard of Skillet Cookies? My husbands grandmother made them his whole life at Christmas.....probably longer....and we LOVE these things! She told me they would only turn out right in an iron skillet, so I follow what the expert said. Another relative tried to make them one year after she passed away, and they were awful. I am convinced she used something other than an iron skillet. I never use anything but my iron skillet and they have always been perfect. Here is the recipe....hope you enjoy as much as we do. One side note, I have not made these since I switched from margarine to butter....not sure how big of a difference it would make. SKILLET COOKIES Ingredients: 2 eggs. beaten 3/4 c. sugar 1 stick margarine 1 pkg. chopped dates 1/8 t. salt 1 t. vanilla 2 c. rice crispies 1 c. chopped pecans Add sugar to eggs and mix well. Melt margarine in iron skillet and pour in egg mixture and dates. Cook until mixture thickens and is dark brown, stirring constantly. Dates will sort of just melt into mixture. Remove from heat. Stir in vanilla. Add rice crispies and nuts, then cool slightly. Form into logs and roll in powdered sugar and wrap in plastic wrap (you sort of have to squeeze a little while forming the log since the mixture is a bit soft because its still so warm). Refrigerate to harden. Slice thinly and enjoy. Keeps a long time in fridge.
