Every year my mother used to freeze volumes of surplus and can 100s of quarts of whole tomatoes, ketchup, sauce, soup, juice, salsa,...beets, jams, peppers, cukes, plums, apples, beans, okra, horseradish, kraut, etc. decades later, Paulette is still hard at work. This traditional Italian method of preserving tomato sauce allows us to store months of tomatoes for the entire winter at the cost of virtually zero net energy consumption to the planet. NEEDED: a bucket or ceramic crock, your hands (clean feet optional :) to crush tomats, sea salt (not iodized), black pepper, cheesecloth or strainer, olive oil, mason jars.
