Every time carbs are eaten, they get into the blood and need to be shuttled into tissues such as muscle and fat. To facilitate the transport of nutrients into tissues, the hormone insulin is secreted. Insulin not only helps to move carbs into muscle and fat, but it also helps to activate both muscle AND fat gain. While Calories and total carbs matter a whole lot more, the kinds of carbs you take in and their effect on insulin levels can also play a small but significant role in determining how much muscle and fat you’re going to carry.
