Everything you love about a breakfast casserole...only lightened up a bit!! ******************************************************************* Hash Brown Breakfast Casserole Serves 12 A great egg casserole to start your day off with Prep Time - 10 min Cook Time - 50 min Total Time - 1 hr Ingredients 2 lb bag frozen potato hash browns, thawed 1 lb turkey breakfast sausage 1/2 onion, chopped 2 cloves garlic, minced 8 eggs 1 tsp salt 1 tsp pepper 1/2 cup non fat milk 1 cups reduced fat cheddar cheese, divided Instructions 1.Preheat oven to 375 2.Spray a 9x13 casserole dish with nonstick spray 3.In a large sauté pan cook chopped onion until it is soft 4.Add in minced garlic and cook for an additional 1 minute 5.Add in sausage and cook until crumbly and browned 6.Remove sausage mixture to a plate and set aside 7.Using the same pan add in thawed hash browns and cook until browned, about 5-10 minutes 8.Place browned hash browns in the bottom of the prepared casserole dish 9.Sprinkle sausage mixture over the top 10.In a medium bowl beat together eggs, salt, pepper, milk and 1/2 cup cheese 11.Pour egg mixture over the sausage 12.Sprinkle remaining cheese over eggs 13.Cover with aluminum foil and bake for 30 minutes 14.Remove foil and bake for an additional 10-15 minutes or until cheese is starting to brown and eggs are set 15.Let stand for 10 minutes before serving 16.ENJOY!
