Experimented with making pork satay today. I tried pork belly, minced pork and collar shabu shabu meat. Minced pork was inspired by Fatman satay and because I did not have enough belly. Shabu shabu was very tender and juicy but difficult to grill. Minced pork not easy to stick together. Belly was nice and juicy with springy texture. The pork was brined in 5% salt solution for 8 hours to make sure its juicy. I am not happy with the marinade yet so dont ask me for recipe. If anyone has a tried and tested Hainanese pork satay recipe, pls share! Most recipes on the internet are the Malay style Satay. I have yet to find Hainanese pork satay recipe!
