FAT FREE BBQ VEGGIE BURGER Ingredients: 1 cup Sweet & Spicy BBQ Sauce 1 – 15 ounce can kidney beans rinsed and drained or 1 ½ cups home cooked 1 – 15 ounce can black beans rinsed and drained or 1 ½ cups home cooked 3 Tablespoons chia seeds 1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon sea salt ½ teaspoon black pepper 3 cups cooked and cooled hulled barley Or brown rice Directions: 1. Cook 1 ½ cups barley on the stove top according to package directions or use a pressure cooker – measure 1 ½ cups dry barley, 2 cups water and cook under pressure for 20 minutes 2. In a food processor, process all ingredients except barley or rice 3. Pour blended ingredients into a large bowl 4. Add 3 measured cups of cooked barley or rice (you will have some leftover barley or rice from the cooked batch) 5. Stir ingredients together well, cover with a lid or plastic wrap 6. Refrigerate for at least 6 hours or overnight 7. After the burger mixture is chilled, form into burgers using a burger press or a wide mouthed Mason or Ball jar lid 8. Layer burgers, separating with parchment paper 9. Refrigerate until ready to cook To grill burgers: 1. Line grill with aluminum foil and place a square of parchment paper under each burger 2. Grill until the underside is browned and burger is heated through 3. Layer with lettuce, tomato, onion and Garlicy Dill Pickles on a Burger Bun, Onion Sandwich Roll or Mini Burger Bun 4. Enjoy additional BBQ Sauce or whichever condiments suite you Oven baking: 1. Preheat oven to 400 degrees 2. Line a baking pan with parchment paper 3. Bake burgers on lined pan for 30 minutes 4. After baking, allow burgers to rest on baking pan for ten minutes before removing from the pan 5. Layer with lettuce, tomato, onion and Garlicy Dill Pickles on a Mini Burger Bun 6. Enjoy additional BBQ Sauce or whichever condiments you enjoy Notes: These burgers freeze well, wrap raw burgers in plastic wrap and stack flat in the freezer Defrost on the counter for several hours before cooking, following original directions for grilling or oven baking See the Mini Burgers recipe for small burgers Suggested condiments: Additional Sweet & Spicy BBQ Sauce, Creamy Ranch Dressing, Whipped Miracle, House Mayo, Chipotle Mayo, Tzatziki Sauce, Garlicy Dill Pickles and/or mustard
