FIGS!! The fantastic, fabulous, phenomenal food! Either fresh or dried, Figs are packed with fiber and super high in Iron. This is an important note because more than 80% of Women are Iron Deficient! Although figs have a remarkably short shelf life and are very delicate, they pack an enormous punch in fighting Heart Disease and much, much more: -Their plant Sterols help to lower blood cholesterol -Dried, they are rich in Potassium, Calcium and Magnesium for bone strength and density -The Potassium helps to prevent fluid retention in the body -High in several B Vitamins, they help you to maintain energy -The Leaves of the fig tree are also edible and their extracts actually have anti diabetic properties which reduce the amount of insulin needed by some diabetics. Figs are sweet and delicious and can be eaten raw. But a fun recipe to pull out and caramelize their natural sugars are: BROILED HONEY FIGS: Preheat broiler 1 Sprigs Rosemary, finely chopped 8 Ripe figs, halved 4 Tbsp. Honey Mix honey and rosemary and let sit for 5 minutes. Brush mixture onto cut side of fig. Place figs, cut side up, on broiler rack. Cook 5 to 6 minutes or until they are just beginning to caramelize. Remove from oven, let cool for a minute and enjoy. Super Delicious!
