FLOURLESS PISTACHIO COOKIES Gluten-free and butter-free cookies with pistachio and coconut. INGREDIENTS 1 cup powdered pistachio ¾ cup powdered sugar 1 cup grated coconut 1 egg white INSTRUCTIONS Preheat oven to 170C (340F). Combine all the ingredients and chill for 2 hours. Line an oven tray with parchment paper. Make small balls from the dough and bake for 7-8 minutes or until their top is very slightly golden. Cool them on a wire rack. Keep in an airtight container up to a week.
